Spiced Ginger Pumpkin Muffins

A gentle on the gut GAPS diet healthy muffin recipe. Rich in flavour, no refined sugar, GF and DF.



Ingredients:

350g almond flour

1/2 tsp BS

1/4 tsp salt

1 1/2 tsp cinnamon

1 1/2 tsp ginger

1 1/2 tsp nutmeg

225g homemade pumpkin/butternut puree or canned unsweetened pumpkin puree

60ml raw honey

4 large eggs

1/2 tsp pure vanilla extract


Method:

-Preheat to 160. Grease a 12 cup muffin tray.

-Combine almond flour, baking soda, sea salt and spices.

-In a separate bowl, whisk pumpkin, honey, eggs, vanilla.

-Pour the dry ingredients into the wet and combine

-Fill each muffin cup and make for 25mins appox.

-Cool slightly before serving. Tasty with a little honey and unsweetened yoghurt.
