Why make this? This richly coloured soup is full of antioxidants and phytonutrients. Beetroot aids the production of bile, to digest fat. Chicken stock helps to heal our gut lining, soothe inflammation and helps with repair. High in protein and amino acids too.
Ingredients:
2 litres home-made chicken stock
6 small or 4 med beetroots, peeled and chopped
4 carrots, cut
1 onion roughly chopped
2 or 3 cloves of garlic
6-8 tbsp animal fat or coconut oil
1 tbsp sea salt
Method:
In a large pot combine the stock, beetroot, carrots, onion, garlic, and fat. Bring to the boil.
Add the sea salt, lower the heat and simmer for 20 mins
Blend, for thinking soup, simmer for longer.
